How Long Do Spices Actually Last? A Guide to Shelf Life and Storage

Unlike fresh produce, ground spices rarely become unsafe to eat after their shelf life — what actually happens is a slow, steady loss of flavour and aroma. A spice that's a year past its ideal window won't harm you, but it also won't do much for your cooking anymore.

Typical shelf life for ground spices

Ground spices like turmeric, chilli, and coriander powder generally hold good flavour for around 12 months from the date they were milled, assuming reasonable storage. Whole spices last considerably longer — often 2-3 years — because grinding exposes far more surface area to air and light, which is what accelerates the loss of aromatic oils.

The three things that degrade spices fastest

Light, heat, and moisture are the main culprits. A jar of chilli powder kept near a stove or in direct sunlight will lose potency far faster than the same jar kept in a cool, dark cabinet — sometimes in a matter of weeks rather than months. Moisture is the most damaging of the three, since it can also introduce clumping and, in worse cases, mould.

How to store spices properly

Airtight containers are non-negotiable — every time a jar is left open, oxygen and moisture speed up the degradation. Glass or ceramic containers are better than plastic, which can absorb odours over time and slowly cross-contaminate different spices stored nearby. Keep containers away from the stove, and out of direct sunlight, ideally in a closed cabinet rather than an open shelf.

A simple freshness check

If you're unsure whether a spice is still good, smell and taste are far more reliable than the printed date. Rub a small amount between your fingers — if the aroma is faint or the colour has visibly dulled compared to when you bought it, it's lost most of its usefulness even if it's technically still "within date."

This is also why we recommend buying spices in quantities you'll realistically use within a few months, rather than stocking up on large packs that sit half-used for a year.
