Two packs of the same spice, from the same region, can taste noticeably different depending on how they were ground. The difference usually comes down to heat.
The core issue: heat during grinding
High-speed steel milling, the standard industrial method, generates significant friction heat as the machine spins. Spices are rich in volatile aromatic oils — the compounds responsible for most of their smell and a large part of their flavour — and these oils are heat-sensitive. Prolonged exposure to the heat generated during fast milling causes a real, measurable loss of these aromatics before the powder even reaches packaging.
How traditional stone grinding avoids this
Stone grinding (using a chakki-style mill) works at much lower speeds and generates far less friction heat. The process takes longer, but the lower temperature preserves more of the spice's natural oils intact. This is part of why traditionally stone-ground spices tend to have a noticeably stronger aroma straight out of the pack compared to a fast-milled equivalent, even when both start from the same raw material.
Texture is a side effect, not the main point
Stone-ground spices also tend to have a slightly coarser, less uniform texture compared to machine-milled powder, since the process is gentler and less precisely controlled. That's often mistaken for the main difference, but the texture is really a byproduct — the real difference worth caring about is what's preserved in aroma and flavour, not how fine the powder looks.
Why this is hard to fake at scale
Stone grinding is slower and lower-yield per hour than industrial milling, which is exactly why most large-scale commercial spice production has moved away from it. It's one of the genuine trade-offs between cost efficiency and flavour preservation in spice processing — not a marketing distinction without a real basis.
